Kid's Kitchen:: Date Balls

What a fun project this was today. Super easy, quick, healthy, delicious AND also kid-approved!
My grandson Linas loves chocolate. His mom doesn't allow him so much sweets. If your kid like to help out in the kitchen, then this project is a great one for a rainy day. And best of all, there is no baking involved. 

DATE BALL INGREDIENTS 
1/2 c raw walnuts and 1/2 c raw cashews/ or cup of almonds 
10 dates, 
1/2 lemon {or water if don't have this}
Optional: cacao powder, hemp seeds, cinnamon, vanilla, coconut flakes for topping
DATE BALL INSTRUCTIONS
Take all the pits out of the dates. Blend the dates and lemon juice until it turns into a paste (1 minute). In a food processor chop nuts on high until so fine that they almost turn into a flour. Scoop out a rounded tablespoon of date mixture. Using your hands and fingers roll the paste into the nuts until it forms a 1 inch ball. Then lightly roll that ball again through the chopped nuts. In order to roll these easily you MUST have moist hands in water without the mixture sticking excessively. I decided to do a layer of raw cacao powder. It gave them a dark truffle sort of a look. You can roll them in coconut powder, goji berries or even hemp seeds if you feel like it. Refrigerate balls for about 2 hours. 
Your kids should like them as well. Of course I can't guarantee it, but give it a try. Great source of healthy fats, fiber and carbohydrates to keep their brains running smoothly.
